Honey should be stored in a closed jar at room temperature. No refrigeration is required. Changes in temperature won't spoil the honey but may affect it's texture.
Honey is a remarkably long-lived and will not spoil as long as other foods do not get mixed into the jar. Raw Honey crystallizes naturally over time. If this happens you can use it as a spread or simply liquefy it by setting the jar in a bowl of warm water.
